my workout earlier! i stayed on another minute so that i could tell myself i burnt 400 calories :P i hate ending on an unround number!
having my music blasting whilst ellipticalling today totally made me up the intensity :D i was very pleased. And afterwards i even jogged back to my room because i was in workout mode! gonna go back after dinner tonight and run on the treadmill for 20 mins and then do some strength stuff if it’s not too crowded :) weeee
speaking of dinner, i have a good one planned for tonight muahahaha. so excited. i just got a cauliflower, which i’m gonna boil and then whip up in my food processor to make pretend mashed potatoes <3 garlic and butter to pump up the taste :P plus some tofu steak and green beans! can you tell i’m already lamenting the passing of thanksgiving? xD
but yeah :) i’m feeling really lively today, cant wait to get back in the gym! feels good to be back on yummy clean foods and veggies and generally delicious stuff :D my weigh in was shite this morning but i’ hoping its water weight which will drop off in a few days time.
more good news: i’ve been voted to be chair of the VegSoc next semester!!! (our current president/founder/chair person is doing a semester abroad so we needed someone to take over) eeee exciting!!! i can influence veggies all over manchester :D fantastic! hope i’ll be up to the time committment!!
i just mad a bigggg lentil soup with kidney beans and a bigggg plate of broccoli
i ate the broccoli first
now i’m too full to eat soup :P
yeah that’s right :P dinner is a plate piled high with broccoli and greens and a pile of mashed sweet potato B)

Socca spiced with paprika and sprinkled with mixed herbs, a generous helping of fresh spinach and some lightly sauteed veg flavoured with a hint of soy sauce and lime juice. aboslutely divineeee
my new pan did a fabulous job of coping with the socca. it came out perfectly for once!!!
Dinner…chickenless chicken ( yeah lazy i know!) salad made of romaine spinach onion red pepper and some rasberry vinaigrette :)
Luke and I fixed ourselves a fancy 3 course vegan meal yesterday :) he provided the fanciness and i helped with the cooking :P we had grilled tofu marinated in a mixture of spices, herbs, and a bit of agave nectar. the result was mouthwateringly delicious :D highly recommend grilling tofu this summer. I think had we marinated it for longer it would have been even better- that said, it was amazing even after just 5 hours of marinating, so seriously…go for it.
to go along with the tofu we had a two-bean salad (chickpeas and kidney beans) with some chopped celery and red onion, dressed with a mix of herbs, oil, vinegar, and sugar. The salad was made with baby spinach and seared asparagus…we meant to chop up some cashews o put on top, but we forgot. oh well!
the starter was some vegan garlic bread…nom.
and for dessert i was pleasantly surprised with some dairy-free chocolate buttons and a gorgeous fruit parfait (we used alpro vanilla creamy dessert type thing)
seriously, one of the best meals i’ve had as a vegan. everything balanced beautifully, from the slightly heated flavour of the red onion to the lemony salad to the sweet, mildly chewy tofu…and it left us not feeling too full, yet completely satisfied :) cant ask for more!
So, that yellowy omelette like thing was the new thing I was trying…its called socca, and its basically made of chickpea flour, a bit of oil, some water, and a dash of seasoning. It was really nice!!! Mine was far from perfect as you can see :L next time ill use a small pan and make mini ones…anyway I served it up hot with some fresh, steamed broccli and some spinach :D I’m very full!
and a little yogurt for dessert :) trying to vary it up a bit since i felt off today, my diet has been kinda same-y for the past few days
