homemade wholemeal tortilla, almonds, sunflower seeds, and lightly boiled sweet potato with various spices/a splash of soy sauce

my very very very very very yummy vegan thanksgiving!!!!
Pictured above : appetisers while waiting for the main course to cook… salt and pepper kettles (<3) and a plate of cheezly, crackers and grapes! absolutely heavenly.
and then….the main attraction!!! redwood’s ‘roasted turkey’ which blew me away. I put a simple glaze on it, and damn that stuff was good. great texture amazing taste. my mouth waters thinking of it :P garlic mashed potatoes (my favourite!!!!) , peas and green beans, roasted vegetables namely parsnips, swede, onion and carrots chopped and seasoned by my wonderful boyfriend :D all slathered in vegan gravy.
oh my god was this meal amazing. it fulfilled every thanksgivingy craving i had and more. i was filled to the brim by the end but not uncomfortably so. my god it was just SO GOOD :| i want moarrrrrrrrrrrrrrrrrrrrrrrrrrrrrrr but alas i gave the leftovers to the boyfriend and he thoroughly demolished them today :P jealous
for dessert, i didnt take a picture, but i made an apple crumble served piping hot with vanilla swedish glace ice cream and a little microwave chocolate cake with melty chocolate in the middle :D perfect way to end a perfect evening. sigh. i want to relive that day xD

sauteed some chickpeas for lunch today cause i’m running low on supplies! they were delicious though :O seasoned with a bit of garlic, paprika, ginger, splash of soy sauce, and a small handful of nutritional yeast :) mmmm
also ate the last of my homemade falafel :P a very chickpea-filled lunch! and gives me a full serving of veggies (possibly two, but i wasnt too specific with measuring!)
Luke and I fixed ourselves a fancy 3 course vegan meal yesterday :) he provided the fanciness and i helped with the cooking :P we had grilled tofu marinated in a mixture of spices, herbs, and a bit of agave nectar. the result was mouthwateringly delicious :D highly recommend grilling tofu this summer. I think had we marinated it for longer it would have been even better- that said, it was amazing even after just 5 hours of marinating, so seriously…go for it.
to go along with the tofu we had a two-bean salad (chickpeas and kidney beans) with some chopped celery and red onion, dressed with a mix of herbs, oil, vinegar, and sugar. The salad was made with baby spinach and seared asparagus…we meant to chop up some cashews o put on top, but we forgot. oh well!
the starter was some vegan garlic bread…nom.
and for dessert i was pleasantly surprised with some dairy-free chocolate buttons and a gorgeous fruit parfait (we used alpro vanilla creamy dessert type thing)
seriously, one of the best meals i’ve had as a vegan. everything balanced beautifully, from the slightly heated flavour of the red onion to the lemony salad to the sweet, mildly chewy tofu…and it left us not feeling too full, yet completely satisfied :) cant ask for more!
